- Built-in Chimney & Thermometer (Celsius)
- Traditional Portuguese Ceramic Baking Dish
- Ultrafire Repair Kit (for easy cosmetic maintenance)
- How does delivery work? Each oven is inspected before shipping. Because these are heavy, handcrafted items, you must inspect your oven upon arrival before the driver leaves.
- Can I install it myself? While the process is straightforward, these ovens are heavy! We recommend involving an outdoor kitchen contractor, landscaper, or even professional piano/safe movers. We provide a detailed diagram to assist your team.
- Is minor cracking normal? Yes. All authentic brick ovens experience hairline expansion cracks when heated. We include a "patch" kit for cosmetic touch-ups, though these do not affect the oven's performance.
- There is a $95 fee for residential delivery
- How long does it take to heat up? Expect 45 to 90 minutes to reach peak temperature. Pro Tip: Use a butane torch and stack your wood in a "Lincoln Log" style to hit your target temp in under 45 minutes. Avoid paper, as it creates unnecessary ash.
- What wood should I use? Stick to hardwoods like Oak, Walnut, Apple, or Mesquite. Avoid soft, resinous woods like Pine or Spruce, and never use coal.
- What tools do I need? At a minimum, you’ll want two "peels" (paddles)—a wooden one for prepping/sliding the pizza in, and a metal one for turning and removing it.
- Do I need to "cure" the oven? Yes! To ensure the longevity of your oven, you must perform a 5-day curing process to slowly draw moisture out of the mortar. This involves starting small fires at increasing temperatures (detailed instructions included).
- How do I clean it? It’s self-cleaning! Once the oven cools, simply sweep out the ash.
- Weather Protection: While our ovens are rugged, they should be covered when not in use to protect the brick from snow and heavy rain. We offer custom-fit covers to keep your investment pristine.
- Standard Wood Pizza Peel: The preferred surface for preparing and launching your raw pizza. The smooth wood prevents sticking better than metal, ensuring a perfect slide onto the hot brick.
- Metal Retrieval Peel: Featuring a long wooden handle, this lightweight aluminum peel is designed to safely glide under fully cooked pizzas and hot dishes for easy removal.
- Pizza Oven Brush: A critical tool for both setup and maintenance. Use the wire bristles and long handle to safely move hot coals to the side of the oven and sweep the floor clean before launching your pizza.
- Aluminum Bubble Popper: This 32-inch tool allows you to manage dough bubbles and rotate pizzas from a safe distance, ensuring an even char without getting too close to the flames.
- Ash Shovel: Specifically sized for brick ovens, this shovel makes cleaning out cooled ash simple and efficient once your cooking session is over. Patio & Pizza Outdoor Furnishings
- Stainless Steel Turning Peel: Unlike a standard retrieval peel, this small, round tool allows you to rotate the pizza while it's cooking on the stone, which is essential for achieving an even bake in high-heat environments.
- Infrared Laser Thermometer: While your oven includes a built-in thermometer for ambient air, a laser gun allows you to check the exact "floor temperature" of the bricks to ensure the perfect bottom crust.
- Protective Oven Cover: To protect your investment, a weather-resistant nylon cover is highly recommended if your oven is kept outdoors. It shields the brick and mortar from rain, snow, and debris.
