Model Comparison: Alto vs. Largo and Tudo Configurations
The LUME Alto models are designed with a taller internal dome and a square Dutch-style door. This increased vertical clearance makes them exceptionally versatile, allowing for rotisserie roasting, large cuts of meat, and artisanal bread baking alongside traditional pizza.
The LUME Largo models feature a lower, wider dome and a rectangular door. This specific geometry directs heat more intensely toward the refractory floor, making it the superior choice for high-volume, rapid pizza production where a crispy, Neapolitan-style crust is the priority.
The "Tudo" designation refers to the exterior finish. While standard Premium models feature the grey stone facade only on the archway with a white-rendered dome, the Tudo models are completely encased in the grey cast stone veneer. This provides a uniform, high-end look and additional thermal mass.

Curing Process: A mandatory curing process must be completed before the first high-heat use. This involves building several small, low-temperature fires over a period of 5 to 7 days. This gradual heating safely draws out moisture from the bricks and mortar to prevent structural cracking.
